Figuring out what to make for dinner every night just got easier! I know everyone dreads the question, “What do you want to eat?” and a reply of the classic “I don’t care, what ever you want…” and the back and forth bickering until eventually one person gets what they want and the other is left to mosey on with the choices the other made.

Let’s skip that tiring argument and take a look at all the craving-satisfying meals I have planned out for you this week…

Monday

MANGO CASHEW CHICKEN SALAD
Don’t get me wrong, I love all of the holidays this time of year and all the food that comes along with these holidays. But sometimes, you just need to reset. Let’s start Monday off right and light with this AMAZING salad! Obviously, this isn’t your ordinary garden salad, but let’s give it a try! You don’t know what you’re missing!

MANGO CASHEW CHICKEN SALAD ( True life: I’m obsessed with mangos ) RECIPE: 1 bag ruby blend lettuce(or whatever TF you want) 1 to 2 mangos 1 cup cashews ; roasted/ salted 1 cucumber sliced 1 cup grated parm 1 to 2 chicken breast (oil, salt, pepper) ( dressing of choice ,you can use any sweet dressing really , I didnt use one ; the mango juice really helps coat lettuce) HOW TO PUT THIS ISH TOGETHER Ummmm so yeah cook your chicken and chop everything up and toss that s*** all together in a big bowl , you’re welcome NOW PUT THAT S*** IN YOUR MOUTH AND EAT IT Thanks as always @torimcgeehon #salad #fastdinner #seasonal #chicken #cashew #lettuce #cucumber #mango #fresh #dressing #greens #chef #cheflife #food #foodporn #dinner #lunch #blog #blogger #foodblog #foodblogger #kitchen #thicc #create

TURMERIC CAULIFLOWER BUDDHA BOWL
Again, this week, I’m usually trying to focus on resetting my body and mind with eating right and light. After shoving my face with all sorts of carbs and yummy desserts, I like to try to eat “real food” and not un-godly amounts of potatoes and pies. This Buddha bowl is bursting with flavor and beautiful, healthy, veggies from all colors of the rainbow. I KNOW IT LOOKS LIKE WORK, but it is soooo worth it and it makes for a great next day lunch at work!

Turmeric cauliflower “Buddha bowl” RECIPE TEST: ⭐️⭐️⭐️⭐️⭐️ This Honestly was so good and I felt like some boujee healthy Hollywood Star eating it, flavors all on point (don’t get scared with all the ingredients it’s was pretty simple putting together) RECIPE: Roasted Turmeric Cauliflower 300-350 grams cauliflower 1 tsp ground turmeric 1/2 tsp ground cumin 2 tsp sesame seeds coconut oil for roasting salt and pepper to season Rest of the Buddha Bowls 1/2 cup brown rice measured uncooked 1 cup edamame beans 1 cup cherry tomatoes 1-2 carrots 1 zucchini 2 handfuls kale or other leafy greens coconut oil for roasting salt and pepper to season fresh coriander, sunflower seeds and chilli flakes – OPTIONAL, to garnish Buddha Bowls Dressing 3 tbsp tahini (hulled or unhulled will work) 1 tbsp sesame oil 1 tbsp maple syrup or honey 2 tsp apple cider vinegar or lemon juice Instructions Put the brown rice on to cook according to packet instructions. I usually do this on the stove by the absorption method (1 part rice to 2 parts water, simmered covered for 35-40 minutes). Preheat oven to 180 C and line two trays (or one large tray) with parchment paper. Chop the cauliflower into small florets. Place in a bowl. Pour over 1 tbsp melted coconut oil plus the sesame seeds, turmeric, cumin and about 1/2 tsp each of salt and pepper. Toss until evenly coated, then spread out on an oven tray. Dice the zucchini and the carrot, and halve the cherry tomatoes. Spread out on an oven tray, drizzle with a tiny bit of melted coconut oil, and toss around so the vegetables are coated. Pop all of the vegetables into the oven to roast. While the rice and roasted vegetables are cooking, prepare the remainder of the buddha bowls. Defrost the edamame beans,Blanch the kale so it's a bit softer and easier to eat, Make the dressing by whisking together all of the dressing ingredients listed above. TURKEY/BACON/PROSCIUTTO SAMMIE
Let’s skip the shameful Subway run this week and treat ourselves with a sandwich that will leave you feeling full and satisfied. After making this beautiful sandwich, you will feel like you can out sub any Subway “sandwich artist” every day of the week! Also, with this sandwich, you can actually know what’s going into it and the quality of ingredients as well!

????FRONT & SIDE VIEW OF A BEAUTIFUL TURKEY/BACON/PROSCIUTTO SAMMIE???? Quick and easy lunch/dinner Sammie right here .. RECIPE: .your choice of bread (I used 12 grain) . 1 avocado mashed . Salt and pepper . 1 slice Colby cheese .4 slices smoked honey turkey .2 slices prosciutto .4 slices BACON ???? BEAUTIFUL BEET HUMMUS
Okay, okay, okay, I know you’re thinking: “TORI HOW IS THIS DINNER?!” and let me tell you, with all the flavor and health benefits from this hummus, you will be left more than satisfied. I love to think of it as a sort of fondue dinner… my favorite dipping yummies to pair with this hummus are: pita bread or chips, grilled chicken bites, broccoli, french bread, bagel chips or bites, pretzel chips, cucumbers, carrots, pumpernickel squares, OR WHATEVER YOU WANT!

FRESH TOM SAUCE SPAGHETTI W/ TURKEY MEAT BALLS
I know I said I was going to try to keep this week light but its FRIDAY! TGIF right? So lets compromise with a low fat, healthier, meat option **drum roll** TURKEY. I love these turkey meatballs and honestly, with all the flavor they have, you will have no IDEA you are eating turkey compared to beef. If you want to lighten this meal up, even more, try using spaghetti squash instead of pasta noodles.

FRESH TOM SAUCE SPAGHETTI W/ TURKEY MEAT BALLS ???????????? ( from scratch sauce & meat balls is the way to go when you want good pasta like wtf) RECIPE: SAUCE : 2 crates cherry toms 1 large Tom diced 1 tbs garlic minced 1/4 cup olive oil 1 large red onion (you can use yellow if your a p****) *cut* 1/4 cup water (or chicken broth if you have it ) 1 tbs garlic powder 1 tbs oregano 1/2 tbs rosemary 1/2 tbs thyme 1/2 tbs parsley 1 tbs salt More salt and pepper to taste Obvi a sleeve of angel hair pasta BALLZ 1 sleeve ground turkey 1/2 cup pulverized seasoned croutons (or Italian bread crumbs , or old bread you have laying around decaying all dried out ) 1/2 cup French onions pulverized 2 eggs Salt and pepper to taste (prbs a tbs or so) HOW TO PUT THIS ISH TOGETHER For the sauce literally throw all that s*** in a roaster pan and bake in the oven at 350*F stirring occasionally for about 2 hours , until the cherry toms start to break down a bit . **Cook your pasta ** ???? BUT WAIT, THERE’S MORE

If you’re like us, some nights there is just too much going on to find time to cook! On those nights, convenience takes precedence. That doesn’t have to mean you are giving up quality, though! We asked Tori for her expert advice on those days that we’re just too tired or busy to prepare a meal.

Cafe Fresh

I love Cafe Fresh. Fresh is in their name and that’s exactly what you will get. I have never had a bad experience at Cafe fresh and I have honestly liked everything I have put into my mouth there. Some of my recommendations are the Tuna Garden Salad, they have a KILLER grilled cheese, Tortilla soup (YUMMY) and of course, you HAVE to try their complimentary (with some meals) pickle rolls!

I have stopped in once or twice when I feel like I have been treating my body like trash. I can tell you, just looking at the meal or drink you will order will already have you feeling like a God. My favorite thing to do going here is to just order the most popular items. Sometimes, I feel clueless looking at a healthier, specialized food item. AANNDDD, you can try something new every time!!

Healthy Harvest Urban Farms

When I have free time, I love to just swing by local stores that specialize in bringing local products and goodies to us (the locals, duh)! I realize buying all your groceries from a store like this may require special budgets or time and ease you may not think you have. But, just stopping in and looking at what all they have that chain stores don’t and leaving with one or two items is better than none, and you really don’t know what you are missing!
