Thicc Kitchen’s Weekly Meal Plan

Yeah, yeah, sure… you stuffed your face for what seems to be a month straight. But the EXTREME stuffing doesn’t happen until those two glorious days. Christmas Eve and Christmas Day! The great thing about it all though is, as if you didn’t eat enough of those classics, filling holiday meals… you probably get to take them home, too! So this week, instead of creating a meal plan for you, I’m going to give you some advice on how to reinvent those Christmas leftovers, and put them to good use!

Breakfast
Leftover Cheesy Potatoes:
Take about a golf ball sized scoop of cheesy potatoes (cold right out of the refrigerator) and mash it into a patty, crack an egg, whisk, dunk patty in egg bath, and roll around in some breadcrumbs, crackers (or if you’re really fancy, panko) and fry those babies up in a skillet and you’ll have some nice, crispy potato pancakes!
Leftover Turkey:
Let’s make an omelet! Gather a handful of chopped turkey, rosemary, brie cheese, some cranberry sauce and let’s go. Start by whisking in some milk or heavy cream into the egg base, salt, and pepper. Get a skillet nice and hot and cook eggs, once eggs start to form a blanket around the pan, dump in the turkey, rosemary, and brie cheese. fold omelet and let the cheese melt. Once omelet is done, place on a plate and pour cranberry sauce over top!
Lunch
Leftover Ham:
Let’s take those leftover dinner rolls and start by lathering those in some mayo. Next, grab your ham and layer that over the bun. Then, add some sharp cheddar (or any cheese laying around) and sandwich that with your ham. Got some leftover green bean casserole? Let’s scoop the good stuff right off the top. You know what I’m talking about… all those good french onions and plop that right on top of the ham and cheddar duo. Now let’s get that baby in the panini press or toasted in the oven and you are golden!
Dinner
Macaroni and Cheese Casserole:
We are going to make the sexiest macaroni and cheese casserole you have ever laid eyes on. Are you ready? We can make this really easy by utilizing a macaroni like Velveeta white cheddar. Prepare that according to box and add in your meat of choice, a heaping scoop of green bean casserole, and then once mixed together dump into casserole dish. If you have any leftover french onion or maybe some potato chips lying around crumble those over the top and toast in the oven for a bit until cheese starts to bubble!
Dessert
Leftover fruit pies:
This will be quick and easy, grab a tube of cinnamon rolls from the store & start unraveling. Once rolls are opened spoon in preferred pie filling and re-roll. Cook according to the package but allow an extra 5 minutes or so taking into consideration of added moisture from fruit. Then serve warm with a scoop of Ice cream!
