Thicc Kitchen’s Weekly Meal Plan
By: Tori McGeehon
January 14th – 18th 2018
Figuring out what to make for dinner every night just got easier! I know everyone dreads the question, “What do you want to eat?” and a reply of the classic “I don’t care, what ever you want…” and the back and forth bickering until eventually one person gets what they want and the other is left to mosey on with the choices the other made.
Let’s skip that tiring argument and take a look at all the craving-satisfying meals I have planned out for you this week…
You’re welcome.

Meet Tori McGeehon!
Monday
Asian Veggie Chicken and Rice
We’re starting this Monday off a little easier to lighten the load of it just being a Monday, how terrible. It won’t be so terrible though, when you sit down to enjoy this flavor-packed meal that only took you less than 30 minutes to create. Did I mention it’s also easy on the wallet? The kicker here is that you will have to go to whichever Hy-vee is closest to you to find this specific sauce. Listen up though, because you WILL want to FIND THIS SAUCE. It is by far one of my favorite pre-made exotic sauces! You can thank me later
Tuesday
Spanish Style Nachos
I guess I am feeling pretty nice starting the week off, because not only is the aroma, color, and flavor of this dish going to knock your socks off, but it’s pretty dang simple to create. Who doesn’t like to throw a bunch of yummy, cheesy, spicy ingredients onto a boat load of crispy tortilla chips?? The cool thing about this recipe is that it’s completely up to you what you want to keep from this recipe or add to it to make it ….dare I say…even better? Let’s spark some creative kitchen magic, let me know in the comments below what you might/plan to add to this dish!
Wednesday
Brinner Breakfast Sammies
Today I chose to take a break from the classic dinner items. Who says you can’t have breakfast for dinner!? Well screw it, because you’re going to want to get in on this breakfast sammie! Have you looked at it? With your eyes? Do you see all that sexy, cheesy, dripping ooeey-ness coming out of that sandwich!? CRAZY? The great thing about this recipe is you can quadruple the ingredients and prepare yourself some leftovers! All you have to do is wrap the left over sammies in some thicc paper towels and store them in the freezer! (Make sure they are in an air tight container or bag.) Then you can just pop them in the microwave for about 3 to 4 minutes the next morning or throughout the week!
Thursday
Strawberry Pecan Bacon Salad
Are you dragging through this week? Boy don’t Thursday’s suck, they are like fake Monday’s, am I right . It’s like your there but not quiiiiittttttteee yet. Well, for today’s meal, I want to try to brighten the mood a little with fresh, colorful, but oh-so-flavorful ingredients. This combination is one of my favorite salads. The flavors are seriously out of this world and I love combining salty and sweet. If you want to add some more protein or a filler to this salad, a nice seasoned garlic grilled chicken does the trick!
Friday
Avocado Caprese Thin Crust Pizzas
It’s Fri-YAY!! For many of you starting your new years diet (or maybe even already gave up) this might be your cheat day. The plus side to this meal, though, is it’s actually pretty healthy in retrospect. If you wanted to make it even more calorie-friendly you could try to build it on a flat-out brand crust! (Check out their website here: Flatout Bread) You can also add whatever toppings you would like to it. If you find any AMAZING flavor combinations, you will have to share with me! Let me know in the comments below, or you can always reach out on any social media platform! Knowledge is power and I’m always looking to learn from suggestions!
BUT WAIT, THERE’S MORE
If you’re like us, some nights there is just too much going on to find time to cook! On those nights, convenience takes precedence. That doesn’t have to mean you are giving up quality, though! We asked Tori for her expert advice on those days that we’re just too tired or busy to prepare a meal.
This week, she recommends supporting THESE local establishments:
“Life is rough. I get that you won’t always have time, motivation, or brain power to keep running to the store, making dinner, or even thinking about a meal plan… thankfully, we have A TON of great places that do all that for you in the QC.”
This week, I decided to set up a little adventure day for you. Ever find yourself bored and don’t know where to start your exploring? Well, here you go! You can start your morning relaxing at home, and by lunchtime make your way down to Cafè D Marie’s for a nice brunch. They were actually just awarded best coffee by U.S.A today! After that, you can burn off some calories walking the shops downtown Davenport. Once the sun starts to set, make your way to Analog, they just opened a new location in downtown Moline, but either location ROCKS! Once your stomach starts to growl, and you’re all out of tokens, stop by MJ’s for some take out and plop your butt right back on the couch, enjoy a movie and eat your takeout!
As always, if you have any questions about my recipes or suggestions please reach out! Also, of course, let me know some of your favorite QC food-related establishments or anything you would like me to check out!!
. . .
Thanks, as always,
Tori McGeehon
