Sarah VanHorn – Holistic Health
It is our pleasure to introduce you to Sarah VanHorn! We found this local health foodie on Instagram. We noticed that she is utilizing some of the QC’s local establishments for her awesome health recipes and we thought it would be a great idea to connect with her! We hope to provide her with a platform to share her story AND her recipes!

Super-Easy, Healthy Quesadilla
Are you ready for a super-easy, healthy, gluten-free, dairy free, vegan (if you want it to be) … QUESADILLA!
What you will need:
Veggies– You choose!
For mine I’m using mushrooms, bell peppers & onion (all from the farmers market, support locals!) I am also using black sliced olives.
Siete cassava shells– their products are awesome for people with allergies, they’re made out of cassava, which is a root and not a grain.
Amy’s Organic vegetarian refried beans
Cheese– I use Nut cheese- here’s the thing, you’re think going vegan means healthier, but a lot of these products contain harmful ingredients! I avoid ones with a long list and anything that has canola oil. I like the brand Myokos, or there are a few locals that make nut cheeses located at Heritage or Healthy Harvest. I also found a shredded aged nut cheese at Fresh Thymes.
Salsa– I enjoy a mild organic one or make your own!
Avocado– of course
So now that you have your ingredients, there’s two ways to do this.
If you have a lot of ingredients cook those separate then add to shell, or add your bean spread to one shell cook it on low heat over coconut oil. Now add your veggie toppings, then add the cheese & another shell on top, as the bottom shell gets brown flip around heat the other side, cut into fours add salsa & avocado & boom you have yourself a yummy Quesadilla that you don’t have to feel bad about eating!
