Apple and Oat Cookies

Not only are these cookies delicious, but they are filled with some pretty health-conscious ingredients! (Well, for a cookie…) The cool thing about these cookies, though, is that not only are they a great dessert to indulge in after a long days work and not feel to guilty about, but they also make a great on-the-go breakfast treat!

INGREDIENTS

1 cup flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 and 3/4 cup old-fashioned rolled oats
1 medium apple diced

HOW TO PUT THIS ISH TOGETHER

Cream butter, sugar and vanilla together until light and fluffy. Add eggs, then add all dry ingredients and chopped apples. Mix until it just comes together. I used a 2 oz scoop and baked at 350*F until the edges were brown.


NOW PUT IT IN YOUR MOUTH AND IT EAT IT!
