Candy Cane Cookie Sammies

The Holidays are upon us and what better way to get into the Christmas spirit than by making some festive, out-of-the-box cookies. I guarantee showing up to a holiday gathering or work party with these babies will leave you being the talk of the town. Also, let’s Kick OREO’S* butts by making a better cookie than they ever can! Don’t be worried if you aren’t a huge peppermint fan either, you can just omit the extract and candies and have yourself a classic better than Oreo, Oreo!

INGREDIENTS

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup butter , room temperature
3/4 cup granulated sugar
1/4 cup light brown sugar , packed
1 large egg
1 teaspoon vanilla
FILLING:
1/2 cup butter
2 cups powdered sugar
1tbs vanilla
1/4 tsp peppermint extract
1 cup crushed peppermints

HOW TO PUT THIS ISH TOGETHER

Cream butter and sugar in mixer until light and fluffy, add eggs until incorporated. Then add vanilla and peppermint extract, add all your dry ingredients (including crushed peppermints) and mix just until fully combined, I used a 1 oz cookie scoop, bake at 350*, half way through baking press them down a little with the back of a measuring cup to flatten. To make the frosting, just mix everything together in the mixer until smooth and creamy. Once the cookies are cooled, I used the 1 oz scoop to fill the cookies with frosting and sandwich together.


NOW PUT IT IN YOUR MOUTH AND IT EAT IT – or save it for the holiday party…
