Desserts with Tori

Still trying to come off my sweets-high this week so I chose something a little healthier (maybe?) or at least you’ll feel like it’s a healthy treat. These cookies pack a punch of flavor and make for a good afternoon/end of the day treat! BONUS you won’t feel so guilty because HEY you’re eating oatmeal & blueberries, am I right?!
INGREDIENTS
1½ cups flour
½ teaspoon baking powder
½ teaspoon salt
2 sticks unsalted butte
1 cup light brown sugar
1 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
3 cups old-fashioned oats
1 cup blueberries
GLAZE
1 cup powdered sugar
juice from one lemon
HOW TO PUT THIS ISH TOGETHER
Whisk the flour, baking powder and salt in a small bowl and set aside.
Cream together the butter and both sugars on medium speed until light and fluffy (about 3 minutes).
Beat in the eggs, one at a time, and then mix in the vanilla.
Stir in the flour mixture with a wooden spoon or large rubber spatula. Then, stir in the oats and blueberries. Be careful not to break the blueberries while stirring (just fold them in a couple times)
I used a 2oz scoop and baked at 350*F until edges were golden (TIP: I topped the cookies with extra blueberries )
GLAZE
Just whisk the lemon juice and powdered sugar together (You can use water to thin it.)
Drizzle over top of cool cookies
NOW PUT IT IN YOUR MOUTH AND IT EAT IT – or save it for the holiday party…
